Funny you mention lard, since Mexico really has one of the lowest obesity rates in the world! Believe me, when I was in Acapulco this summer, I didn't see many fat Mexicans, I did see a lot of fat white tourists, laying on the beach, exposing it all, yikes!

I suspect because it cooks differently and if you have a family recipe it doesn't taste 'right' without it. I remember my great aunts discussing when my Great Great Grandmother discovered that you could get almost the same texture with Crisco but the 'taste was never quite the same'.
I have no idea why that stuck with me all of these years.
pezdispenser - it does not follow from being an immigrant (even were we not born here) that we were an ILLEGAL immigrant. Legal immigrants are invited. It is all the difference between a guest and a thief.
