I made up this Salsa recipe myself. It's great and you can make it hotter or milder to your taste.
Salsa

2 gal. Tomatoes, peeled and crushed
3 cups Bell Pepper, seeded and chopped
2 cups Onion, chopped
1/2 cup fresh Cilantro, chopped
1/2 cup Parsley, chopped
2 tbs. Garlic, minced
4 Hot Peppers, seeded and chopped (optional)
1/2 cup Sugar
1 cup Apple Cider Vinegar
2 tbs. Black Pepper
2 tbs. Salt

Combine all ingredients and simmer until desired thickness is achieved. Ladle into sterilized jars and process pints 25 minutes in a boiling water bath.

I am making salsa (it's simmering on the stove) right now and I used Tomatoes, Onions, Bell, Jalepeno, and serrono Peppers. Also fresh Garlic and spices.
First you have to hot water bath and skin the tomatoes then chop up the other stuff and cook it for a long time. I took three scoops of the salsa and pureed it and added it back to the pot. I am waiting for answers on how I can thicken it. Then after a while I will can it. Everyone makes salsa differently but my husband and I like this kind.

Hot Pepper Mustard Recipe

5 habanero peppers or bell peppers, of you choice (you can change up the number of peppers to suit your taste)
1 1/2 cups vinegar
1/4 cup salt
1 1/2 cups water
5 cups sugar
1 cup flour
1 tablespoon turmeric
1 tablespoon dry mustard
1 (16 ounce) jar plain mustard

Wash peppers and place in blender with vinegar.
Blend until peppers are ground fine.
In a saucepan, combine pepper/vinegar combination with salt and water.
Cook until peppers are tender.
Strain through cheesecloth and return liquid to large boiler.
In a mixing bowl, combine sugar, flour, turmeric, dry mustard and mustard.
Stir well, making a paste.
Add to boiler and cook over low heat until everything is blended well.
Slowly bring up to a boil, stirring constantly.
It will stick if it is not stirred constantly.
It will thicken as soon as it gets to a boil.
Turn off and dip into prepared jars.
Be sure to wipe rim of jars completely clean with warm towel and place preheated lids on jars and tighten rings.
Turn upside down for 5 minutes.
Turn upright after 5 minutes and allow to cool completely before moving.

HOT STUFFED PEPPERS

Hot peppers
Cabbage
Salt
Celery seed
Mustard seed
3 c. sugar
3 c. vinegar
1 c. water

Wash peppers and remove seeds. Cut cabbage as for slaw and sprinkle with salt, celery seed and mustard seed. Stuff peppers with cabbage mixture. Bring sugar, vinegar and water to a boil. Add peppers and bring to scalding again. Pack in hot jars. Cover with vinegar mixture and seal.

umm...well if your making salsa then buy tomato sause and chop up the peppers into the tomato sause and EAT IT!!
