I have used tomatoes, onions, bell, jalepeno, serrano peppers, garlic, spices. I pureed some of it, but now i want it to thicken so it ends up like "Pace". Any Suggestions?? Oh I also did a little cornstarch with water.

you should simmer it for a bit. The longer you simmer, the thicker it will get. The tomatoes were probably cooked down before adding other ingredients for the pace.

You could maybe add some cheese to it and make like a queso dip.
CHILE CON QUESO

1/3 c. vegetable oil
1/2 c. finely chopped onion
1 clove finely minced garlic
1 tbsp. flour
1 (5 1/2 oz.) can evaporated milk
1 fresh tomato, chopped
1 lb. Velveeta cheese, cubed
1/2 c. Monterey Jack cheese, cubed
3 tbsp. minced jalapeno peppers (fresh or pickled)
Tortilla chips or vegetable sticks

Heat oil, saute onion and garlic until translucent. Stir in flour. Remove from heat. Slowly add milk, stirring, then the other ingredients. Cook and stir over medium heat until thick and smooth. Serve as a dip with tortilla chips or raw vegetables.

let it sit for a bit in the fridge. you shouldn't need any corn starch. if all else fails, puree more. home made salsa is much better than pace you'll get used to the consistency.
