Southern Pecan Pie II
"I received this recipe from my friend Joyce three years ago, she in turn got it from a elderly southern lady. It is a real classic Southern style pecan pie and is very pretty too!"
Original recipe yield: 1 - 9 inch pie.

INGREDIENTS:
1 1/2 cups all-purpose flour
3 tablespoons white sugar
1/2 teaspoon salt
1/2 cup butter, chilled and diced
1 egg yolk
3 tablespoons ice water
1 1/2 cups pecan halves
3 eggs
1 cup light corn syrup
3/4 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons milk
3 tablespoons butter, melted
1 teaspoon vanilla extract

DIRECTIONS:
In a large bowl, combine 1 1/2 cups flour, 3 tablespoons sugar and salt. Cut in butter until mixture resembles coarse crumbs. Mix yolk with water and stir in until mixture forms a ball. Wrap in plastic and refrigerate for 1 hour or overnight. Roll out and place in a 9 inch pie plate.
Preheat oven to 450 degrees F (230 degrees C.)
Place pecans in the bottom of pie crust. In a large bowl, Stir together 3/4 cup of sugar and flour. Mix in the eggs, corn syrup, milk, melted butter and vanilla. Blend well and pour over pecans in crust.
Bake in the preheated oven for 10 minutes. Reduce temperature to 350 degrees F (175 degrees C) and bake for 40 to 50 minutes, or until golden brown and filling is set.

Caramel Pecan Pie
Ingredients
(6 servings)
36 ea Kraft caramels
1/4 c Water
1/4 c Margarine
3/4 c Sugar
1/4 ts Salt
1/2 ts Vanilla
3 ea Eggs,beaten
1 c Pecan halves
1 ea 9 " unbaked pastry shell
Instructions
Melt caramels with water & margarine in a saucepan over low heat. Stir occasionally until smooth.Combine sugar,salt & eggs. Gradually add caramel sauce;Mix well. Stir in pecan halves & pour into pastry shell.Bake @ 350 degree for 40 minutes.Pie filling will appear soft,but becomes firm as it cools.

Southern Pecan Pie
1 cup. sugar
1/2 cup corn syrup
1 unbaked 9 inch pie shell
3 eggs, well beaten
1 cup pecans
Melted butter
Combine sugar,syrup,and melted butter.Add beaten eggs and pecans to syrup mixture, mixing thoroughly.Pour filling into pie shell.Bake in oven at 375* for 40 to 45 minutes

Pecan Pie
1 unbaked Pie Crust
2 Eggs, well beaten
2 tbs. Butter, melted
1 tsp. Vanilla
1 cup Sugar
1/3 tsp. Salt
1 cup Karo Syrup (dark)
1/3 tsp. Salt
1 1/2 cup Nuts
Mix ingredients together putting pecans in last. Pour into unbaked crust. Bake for 15 minutes then turn down to 300 degrees and bake until done.
Chocolate Pecan Pie
4 Eggs
2 tsp. Vanilla
1 cup Sugar
1/2 cup Plain Flour
1 stick Butter
1-1/2 cup chopped Pecans
3 tbs. Milk
1 cup Corn Syrup
1 cup Semi-sweet Chocolate Pieces
1/4 tsp. Salt
Preheat oven to 425 degrees. Line pie plate with crust. Partially bake crust 7 minutes. Remove and set aside. Immediately reduce oven temperature to 325 degrees. Heat and stir chocolate morsels and milk in small saucepan over low heat until smooth. Pour chocolate evenly over crust; set aside. Mix slightly beaten eggs with remaining ingredients in a large bowl. Slowly pour mixture over chocolate layer. Place ring of aluminum foil around edges of crust to prevent over-browning. Bake 55 to 60 minutes or until filling is puffed but center is still soft enough to move, like gelatin, when shaken gently. Tent pie with foil if crust browns too quickly. Cool on wire rack.
