I just got a new recipe book but all the recipes include "large eggs", which try as I might I haven't been able to find anywhere. So can I use one normal-sized egg instead of a large one? Or maybe I need more? Help will be greatly appreciatted!

If the recipe says 'one large egg' I would just use one normal sized egg - perhaps add a little more milk (or whatever liquid is in the recipe) to compensate. Maybe if the recipe calls for, say, six large eggs you could throw in an extra one! I don't think there's a huge difference between normal and large. Bon appetit!

I think one normal size egg should be fine.

Some of my recipe books call for a jumbo egg and I only have the normal sized ones. The recipes come out fine.

Large eggs are in the dairy section with all the other eggs. I think they are the same as regular sized. If you can't find them, ask for help. As for the eggs needed in your recipe.......it really depends on what your making. With cake, if you use two eggs instead of one, it makes it more moist, so if you are baking a cake, I'd use two. Otherwise one should be just fine.

most of the eggs you find in the market are large eggs

You can go ahead and use one regular egg- the recipe won't be affected.

two "normal" eggs will actually be bigger than one "large" egg.
