I have lots of zuccini bread recipes, I dont think I need anymore of them. I would like main meals, or side dishes.

Slice them, dip in lemon juice spread them on a sheet of muslin or something that will let the air get all round them and dry them in a VERY low oven (around 80 deg C), turning frequently. They go leathery and can be stored in a jar and used in stews or just as a snack (like dried apple).

Zuccini actually makes a really good replacement for either meat or pasta in spaghetti. Just use zuccini in place of the meat, or use meat in the sauce and replace the pasta with the zuccini. Pretty tasty stuff.

Saute Zuccini and olive oil on low-medium heat in until it's soft. Lower the heat and add Rubusto Italian dressing (Wish Bone Dressing works pretty good). It's simple and tastes great. Works well with squash too.

One of the easiest ways to cook zucchini is to cut off the ends, slice off the peeling straight down, just on the sides, then slice it lengthwise. So basically, you end up with four pieces of zucchini that are rectangular shaped, with peel only on the sides.

Cover with extra-virgin olive oil and coat liberally with Cavender's Greek seasoning - a really great spice blend. The spice blend acts as a crust. You can grill or saute in a non-stick pan until lightly browned and still crunchy, but warm all the way through. Sprinkle with parmesan cheese.

4 medium zucchini
1 medium onion, minced
1 can roasted red peppers, chopped
1/2 green pepper, chopped
2 cloves garlic
1 egg, beaten
2 thyme, sprigs
1/4-1/2 teaspoon oregano
salt and pepper
3/4 lb ground beef (or chicken, turkey, fish, 1 can of tuna, or other veggies...you get the idea)
2 tablespoons olive oil
8 slices cheese (any kind really, we use gouda or gruyere, though this really is a matter of personal preference)

1. Wash zucchini, and put in a pot of cold water (do not remove ends).
2. Bring to a boil and cook until tender, about 10-15 minutes, maybe a little longer depending on the size of your zucchini.
3. Meanwhile, heat olive oil in a fairly large skillet.
4. Sautee garlic first, then add onions, green pepper, thyme, and oregano.
5. When the veggies begin to soften, add ground meat (or whatever you are using), season with salt and pepper, and brown until cooked through.
6. Drain off any exess grease.
7. Set aside to cool slightly.
8. When the zucchini have cooked through, remove from water, and allow to cool enough to handle.
9. Slice cooled zucchini lengthwise, and scoop out center, leaving a little veggie flesh to form a"boat.
10. "Mix ground meat mixture with the red peppers, and the scooped out zucchini (chopped), and the egg.
11. Fill the zucchini boats with the mixture, and top each with a slice of cheese.
12. Bake in a 375º oven for 20-30 minutes, until heated through, and cheese begins to bubble and brown.
13. Serve hot.
14. Note:If making this dish with tuna or fish, I like to add a little mayo or garlic mayo, and substitute the raw egg for a hard boiled and chopped one.

Zesty Grilled Veggies

4 medium zucchini, cut diagonally into 1/2-inch thick slices
3 each red and yellow peppers, cut into 1/2-inch wide strips
1/4 cup KRAFT Zesty Italian Dressing
1/4 cup KRAFT 100% Grated Parmesan Cheese

PREHEAT grill to medium heat. Grill vegetables until tender, but crisp.
PLACE vegetables in large bowl. Add dressing; toss to coat. Sprinkle with cheese.

Zuccini Pasta is good, or you can Stir Fry Zuccini or even better bread it and deep fry it.

With your zuccini (cubed) and butter cook in pan until soft, add handfull of cheddar cheese (grated) and stir till melted, add salt and pepper.. It's called Calavasitas (spelling might be off.)

I wonder if you've tried "cheese zucchini": Dice a few zucchini with skin on. Dice a small onion, a couple of tomatoes and a small banana pepper without seeds. Fry everything on olive oil for about 15 minutes or until everything looks cooked. Then, add salt, black pepper and lots of shredded mozzarella cheese. You can put it on top of any kind of pasta or eat it by itself.
