I was in Puerto Rico (Fajardo) many years ago, and had yuca that was unbelievably delicious. It was prepared at someone's home... and I haven't been able to get the recipe. It was sweet to the taste... and had cinnamon (and I believe brown sugar) sprinkled on it... and baked? I believe this is prepared authentic style to the particular area, so I would appreciate the advice from someone who knows what I'm looking for. If you know what I'm looking for, please also advise if I can use frozen Yuca... or will I need to buy it fresh.

Look for Cassava (Yucca) Recipes...This sounds like it is what you are looking for.


Cassava Pone

3 cups freshly grated cassava
2 cups freshly grated coconut
1 1/2 cups granulated sugar
1 teaspoon salt
1/4 cup melted butter
1/2 teaspoon each cinnamon, ginger, nutmeg and allspice
2 tablespoons melted Irish butter
2 cups whole milk
1/2 cup raisins (optional)
2 beaten eggs
1 cup flour
1 teaspoon each vanilla and almond essence

Combine dry ingredients and raisins, add butters, milk, eggs and essences. Spoon mixture in greased small loaf pans. Bake in a preheated oven at 325 degrees for approximately one hour, or until tester comes out clean. Cool and place in a covered container. Refrigerate after two days if not
completely eaten.

I have seen recipes for New York System Wieners (aka "Gaggers") which use cinnamon in the sauce (a delightfully Yankeefied version of chili) but my Yahoo!Search has thus far been fruitless.

I never had yuca in that fashion, but you could bake it with butter and sprinkle some cinnamon and sugar on it........or you could boil it then put butter, cinnamon, and sugar in the water.
