It's instinct, and everyone does it. In fact there's a whole art/science to it called NLP. The idea is that we reflect each other's body language to establish trust and rapport in the conversation. You can also use it to alter people's moods to some extent. For example, if you see someone slouching you can sit next to them and slouch too. And they'll unconsciously think that you are like them. (People like people they perceive to be like them.) Then, you can slowly start sitting up and talk to them, and their mood and body language will change to reflect yours automatically. It's supposed to be a very powerful set of techniques (because most people don't do it on purpose), but I've only toyed with the idea. You can use the search engine for more information about NLP, and there are lots of books on Amazon.com about it. Good luck!
