French Fried Cactus
Ingredients:
Two pounds cactus, cut into long strips, 1/4 inch wide
Egg and milk batter to roll the cactus into
Wheat and corn flour to make a breading
Salt and pepper

This is one recipe in which we don't boil the plants first, in this one the fresh cactus are cut into french fry style strips 1/4" wide and rolled in a batter of milk and eggs then rolled through flour, cornmeal or a combination of both. Frying in a skillet or deep fryer will give a deep gold/green color. They are great fresh out of the oil.

Cactus Breakfast Burrito
Ingredients:
1 lb. cactus
1 lb. potatoes
one medium onion
three cloves garlic
one clump cilantro (if available)
four eggs
cheese (if desired)
seasonings to taste

This is one of my favorite recipes, the cactus mixes very well with many ingredients and tastes very good. Take the cleaned and diced cactus and add to some diced potatoes that are already pretty well cooked with your favorite spices including garlic and onions. After a minute or so add a couple of fresh eggs to the mix and scramble all together well. Heat some tortilla shells and spoon the mixture into the shells, add salsa roll up and enjoy.

First, ya singe the thorns off. Then you can bread 'em and fry 'em, puree them and put 'em in a cake recipe, or you can even make jam out of 'em. Prickly pear is one that's very, very versitile. I singe smaller pads of those and fry 'em in hot oil to add to a cheesburger. Mmm! A burger made with two big beef patties, a slice of swiss cheese, onions, bacon and fried prickly pear! Son of a gun but that's good!
