I am doing alot of document scanning but it seems to take so long on my printer/scanner. Would it speed things up to get just a scanner?

No. Being an "all-in-one" peripheral has nothing to do with it.

However, I am not a huge fan of having one and prefer a separate scanner and printer. My biggest concern is that if one of the components, such as the scanner breaks, the entire thing is broken. Separate components are much easier to deal with.

Not unless your new scanner has a higher scan speed than your existing one. Assuming the same specifications for scan time, I can not see where having printing and fax mode options would make a difference. I would try scanning the document at a lower resolution to make the process quicker or buy a faster scanner.

Yes, the dedicated scanners are much more faster than the all-in-one scanner.

No, it all depends on the particular model of scanner or all-in one that you buy.

You can usually find the output rates listed for a particular model at the company's web site or in some cases where they are sold, or even on the box they come in......
