That's the traditional phone wiring layout, that will accommodate two phone lines; red and green are a pair, and so are yellow and black. Like any electrical circuit, two wires are needed to allow for the flow of electrons. When a person speaks into a phone, the voice causes an electrical signal to be induced in the circuit that matches the voice pattern. When you hear the voice, the receiver portion of the phone has recreated the voice of your friend for you to hear.
One wire is called tip, the other ring. I forget which is which. I bet wikipedia will have this information. Many people are now using 8 conductor cat5 networking cable for phone lines. So the new colors are blue and blue-white, orange and orange-white, green and green-white, brown and brown-white. The cat5 cable can accommodate digital signals because the pairs are twisted, which helps to keep the signal isolated within the wire pair, and limits signal bleed to other pairs of wires. Remember ever hearing another conversation occurring in the background while you're trying to carry on a conversation with your friend? Today quality phone wiring is much more critical than it used to be.

Hi. Only two of the wires are used. To me it's amazing that some telephone engineer figured out how to 1) allow duplex operation (both people can speak at the same time. You can't do this on cell phones!) 2) power the back-light on phones so equipped, 3) supply enough voltage to ring the bell, 4) provide for DSL Internet using the available higher frequencies, all with only two wires.
