It's my husband's birthday today and I've spent a fortune on fillet steak and really don't want to ruin it. I usually grill steak but I'm not sure that's the best method for fillet. We both like our steak quite rare. Has anyone got any suggestions? All ideas gratefully received - thank you!

THE BEST WAY TO COOK FILLET STEAK IS IN A VERY HOT FRYING PAN LITTLE OIL SALT &PEPPER (CRACKED BLACK) SEAL FOR 2 MINS BOTH SIDES UNTILL COULOURED PLAICE IN OVEN ON HOT TEMP(3/4 FULL) COOK FOR ABOUT 8 MINS FOR MED TO RARE (FOR 8oz) TAKE STEAK OUT PUT PAN ON FLAME ADD RED WINE REDUCE ADD DOUBLE CREAM CRACKED BLAK PEPPER REDUCE UNTILL THICKENED SERVE WITH BABBY NEW POTATOS GREEN BEANS AND TOMS ENJOY.

For high quality steaks, I recommend a simple combination of dry spices rubbed on (like, salt, pepper, garlic, etc., seasoned salt, or one of the Mrs. Dash flavors with some salt, or one of the McCormick's Grill seasoners). It only needs to sit for 10-15 minutes before cooking.
The easiest way to cook them is on a grill, as hot as you like - the hotter the better. Oil up the grill, and once it's hot, slap the steaks on and don't touch them for 5 minutes. Flip them over, and cook for another 3 minutes.
The timing depends on the thickness of the steaks, and how rare you like them. They should still be pretty rare with these cooking times, but you can guage it with your eye, or use a meat thermometer. Eyeballing it, you want the cooked color to only creep a little less than half-way up the side of the steak on the first flip. Consult a cookbook for temperatures if you go with a meat thermometer.
As long as you cook them for a short time on a high temp, you should be fine, whether you go with a grill, a broiler oven, or a frying or grilling pan. If you use a frying pan, I don't recommend anything but cast iron for steaks.
And good steaks don't need sauces, and the best steaks don't need marinade.

The simplest way to make filet mignon is just season both sides with kosher salt and freshly ground black pepper. Then heat up some good quality butter in a skillet, put the steaks in the skillet and sear both sides. Since you like it rare, as soon as the other side is seared, take it out and top with your favorite compound butter (butter with any ingredients you like, like bleu cheese, chipolte peppers, herbs, etc) or just a good pat of butter and top with some finely minced parsley. If you like steak sauce with your steak, have some of that on hand. Happy cooking!

get your fire real hot! have a deep aluminum pan lined with HEAVY DUTY ALUMINUM FOIL ready when the steaks are done. have another piece of foil ready to cover the steaks!
take filet's and and brush heavy with olive oil on both sides. place the filet's over the fire on the grill and close for 2 to 3 minutes. turn you filet's over and do the same! the outside should be charred on both side! remove the filet's and place in the aluminum pan and COVER IMMEDIATELY! DO NOT OPEN FOR 15 MINUTES!
note: use tongs when turning meats not a fork! the juices will run out making the meat dry if use a barbecue fork or any fork for that matter!

A really hot pan, and brown it then pop it in a hot (200 -220) oven for 10 - 15 mins. Serve with a knob of garlic butter on top.
I invested in a "sizzler" to cook and serve my steaks ~ it was money well spent. Perfect steaks every time!

In Argentina they cook steak on a parrilla. That is the glowing embers of logs raked into a pit and the steak cooked over it. Damn it's good! Of course if you like your fillet really rare then there's tartar or carpaccio. Yum uym, Yum yum yum.

You should marinade before grilling.
marinade with a bit of spices, thyme and some soy sauce, leave it for couple of hours before grilling or sealing it, have some fried onion and sage to top it up when you are ready to oven and oven it for 4 minutes on 165 c.
have a sauce ready (some mushroom sauce{shallots in hot butter, then add n swet the preped mushrooms, some white wine, cream, n a bit of seasoning, can also add a bit or 2 tblspoons of tomato ketchup})

Soak the steak in 2 tablesoons of brandy and leave to marinate for about 2hours . Fry rather than grill in olive oil

Outdoor grill preheated until *very hot*. Nearly (but not quite) char each side; depending on thickness 2-4 minutes each side.

You could wrap it in bacon, secured with a toothpick.

A really good steak doesn't need sauce, but if you like them Bearnaise is good.
