Bake a whole chicken with lemon sauce and capers. The smell is out of this world when you bake chicken. He'll be in love, the minute he walks in the door.

Make a roast. It is sooooo easy to make too (you will have lots of time to get all dolled up). Just get out a crock pot, put the pork roast in and dump a packet of french onion soup mix on it. Add about a half cup of water and some carrots, potatoes, and onion. Put on high and let sit for about 5-6 hours. The meat will be so tender it will fall off the fork. Make some good sides with it and something for dessert like brownies. This kind of a meal is a sure fire way to a mans heart.

I always like to fix chicken and potatoes
Take chicken breasts and pound them fairly thin, dip in butter, dip in mashed potato flakes and bake in the oven
Take a can of del-monte potatoes, add 1/4 cup milk 2 tablespoons shredded cheddar cheese, 2 slices of kraft cheese squares and mix up (tear the squares into several pieces)
Top with a few pats of butter and parmesan cheese and shredded cheddar cheese and bake in the oven
Both can bake for about 30 min at 350 (flip the chicken over after about 15 min)

I wouldn't go too crazy. first date, you don't want to spend too much time in the kitchen or, god forbid, raise expectations.
Keep it simple.
