You don't want to make a bleu cheese dressing for a steak. What you want is bleu cheese butter. Take a stick of butter and leave it out at room temperature to soften it. After it's soft, put it in a bowl, add some bleu cheese to it and mix it up. Add salt and pepper to taste. Then take out a sheet of plastic wrap, lay it on your working surface and spoon the bleu cheese butter on of the short sides of the plastic wrap lengthwise. Then roll the plastic wrap around the butter just like you're rolling up a newspaper. Once the butter has reached the end, grab the plastic wrap by both ends and spin it around slowly like you're making a butter sausage. Once it's secure, smooth and shape it so that it's even. Then just pop it in the fridge until it's cold.
So when you make your steak, just take the steak out, pop it on the plate, take out your butter which should be solid, cut a nice slice of the butter and put it on top of the steak to melt. Happy cooking!

Blue Cheese Sauce
2 cloves garlic, chopped
4 ounces blue cheese, crumbled
1/3 cup mayonnaise
2/3 cup sour cream
1 1/2 teaspoons Worcestershire sauce
In a saucepan over low heat, combine blue cheese, mayonnaise,garlic, sour cream and Worcestershire sauce. Stir until smooth; serve over sliced tenderloin.

It's best to just crumble fresh blue cheese and it will get a little melted from the heat of the steak, not to use a dressing.

1/4 cup green onion, thinly sliced
1/4 cup blue cheese, crumbled
2 tablespoons soft goat cheese (chevre)
2 cloves garlic, minced
Combine all ingredients and gently mix together until even, but not blended smooth. It should be coarse in texture.
