I'm moving to Denver and am wondering what is the practical mountain biking season? You know...I don't want to freeze my nuts off or be riding through snow...

There are open trails all year long. The colder it is, the lower elevation you will be riding but with 300 days of sunshine every year there is rarely a time where you can't ride.

There are warm, rideable days all year long. The lower the elevation, the less snow stays on the ground, so you will be able to ride on a warm day in january if you want, as long as you don't go up to the mountains.
It is hard to say what is a practical season, since this past year we had a hot april, but got some snow in may.
Generally, I would say that you are pretty set for a season from the 2nd week in May to the 1st week or so in October. You can get some decent rides in before and after then, I was out in shorts and a tshirt on my bike the first week in March (just not in the mountains).
