Shrimp New Orleans
Ingredients:
11 oz whole Butter,
1 t cayenne Pepper
2 t black pepper, coarse grind
2 t oregano
2 T garlic, chopped
1 t sea salt
2 t thyme
PREPARATION
Step #1 Combine all the ingredients above. Hold refrigerated
Preparation:
28 each (4 skewers w/7 each)
4 t McCormick Cajun seasoning
4 oz lemon butter
12 oz bbq butter sauce
20 oz Jasmine Rice, cooked
4 T green onions, thin Chinese cut
2 each lemon wheel
PREPARATION:
Step #1: Season and grill shrimp skewers, basting with lemon butter.

Step #2: Mound rice in center of pasta bowl. Remove shrimp from skewers and randomly arrange around rice. Pour sauce over shrimp.
Step #3: Sprinkle all with green onions. Garnish with twisted lemon wheel on top of rice.
SENSITIVITIES:
Do not overheat the butter sauce or it will break.

2 pounds medium shrimp, de-veined
2 red potatoes cooked and quartered
12 pieces carrots, cut into 6-inch strips
12 pieces celery, cut into 6-inch strips
4 lemon wedges
4 ounces melted butter
4 frozen corn cobbettes
2 tablespoons Cajun Seasoning
1 tablespoon minced garlic
Dash Liquid Smoke (optional)
Poaching Liquid
1 gallon water
1/4 cup Durkee’s Hot Sauce
4 bay Leaves
1 tablespoon Bubba Gump Brand Seafood Boil spice
1/4 cup beer
Combine all Poaching Liquid ingredients and then bring to a boil, then reduce to a medium simmer. Add Shrimp, vegetables, corn, potatoes, and lemon wedges and cook until shrimp is completely done. Remove from poaching liquid, strain and place in stainless steel bowl. Add butter, Cajun spice, garlic and Liquid Smoke and toss together.
Serve on large platter with extra lemon wedges.
Serves 4.

Cajun Butter Sauce
A reeeeeally good cajun sauce for baked/broiled/fried fish...
This can be made hot and spicy or mild (eliminate cayenne).
2 cups boiled, deveined crawfish tails (or boiled, deveined shrimp)
1/2 stick (1/4 cup) butter
1 Tbsp chopped onion
2 Tbsp chopped green onion
1 large clove garlic, finely chopped
1/4 tsp cornstarch
1 tsp salt & dash or three of cayenne pepper
1 cup milk
1 cup shredded cheddar cheese
Coarsely chop crawfish.
In large saucepan, melt butter and sauté the onion, green onion, and garlic.
Toss in the crawfish tails and sauté them 5 minutes.
While everything is simmering, liquify the cornstarch in a little water and stir in the salt and pepper. Begin adding the milk, a small amount at a time, into the crawfish mix. Pour in the cornstarch mix and stir till sauce begins to thicken.
Turn up heat to almost boiling and cook for 2 minutes.
Reduce heat to simmer. Cover and cook another 5 minutes.
Place your baked/broiled fish fillets on a heated platter and sprinkle them with the cheddar cheese. Ladle the hot sauce over the top of the cheese.
This sauce is good over any fish - whether fried, broiled, baked, or grilled. Also good on soft-shell crabs, oysters, fried shrimp, etc. Just a good cajun sauce.
