Can anyone think of any art projects for 5-11 year olds that would be appropriate for winter solstice.

There will be around 50 kids. No candles allowed.

Check out crayola.com in the lesson plan section. You'll have to register, but they usually have good idea. Find a nice wintry theme, such as snow flakes. I think making wreaths would also be appropriate. A cure project I've seen done is taking old puzzle pieces, painting them green, and gluing them together on a cardboard "o" to make a wreath. Then the students can decorate them with bells, glitter, and bows! Your planning will depend on if you want this to be a secular lesson plan or a Pagan one. Either way, you can find a short story to read to them first to get their creativity going, and then work on the art project. If it's secular, you can integrate science into the project and explain why the days are shorter now than in the summer. Perhaps a theme about planets and the sun would also work.

While the students are working, play instrumental wintry-type music. Celtic music would also be fun!

If scissors are allowed, cutting out snowflakes is always fun and creative.
