Crabmeat Roll-Ups

"This is an easy and delicious spread, and yet another way to use tortillas for an appetizer. The mixture can also be used without the tortillas as a spread on crackers."

INGREDIENTS:
2-1/4 (8 ounce) packages cream cheese, softened
1/2 cup and 1 tablespoon cocktail sauce
2-1/4 (8 ounce) packages imitation crabmeat, chopped
1/2 cup and 1 tablespoon shredded Swiss cheese
1/2 cup and 1 tablespoon chopped green onion
9 (8 inch) flour tortillas
1 cup and 2 tablespoons additional cocktail sauce for dipping

DIRECTIONS:
In a medium bowl, mix together the cream cheese and cocktail sauce until well blended. Stir in crabmeat, Swiss cheese, and green onion. Spread about 1/2 cup of the mixture onto each tortilla, and roll up tightly. Wrap each tortilla in plastic wrap, and refrigerate overnight.
Slice rolls into 1/2 inch circles, and arrange on a serving tray with a bowl of cocktail sauce for dipping.

INGREDIENTS:
6 (10 inch) flour tortillas
1 (8 ounce) package cream cheese, softened
12 slices ham
4 ounces fresh basil
1 cup sun-dried tomatoes
12 leaves red leaf lettuce - rinsed

DIRECTIONS:
Spread each tortilla lightly with cream cheese. Arrange two ham slices across the middle of each tortilla. Add a layer of fresh basil, then a layer of tomatoes. Do not place ingredients too close to tortilla edges. Add lettuce; use enough leaf lettuce to cover across the center of each tortilla, with some of the frilly leaf edge hanging over.
Starting at one end, tightly roll up each tortilla. Stick toothpicks in four evenly spaced spots of tortilla roll. Place tortilla rolls in a dish, cover, and refrigerate for 2 hours to chill.
Slice each roll into four evenly sized sandwiches, and serve as soon as possible.

INGREDIENTS:
1 cup mayonnaise
1 (16 ounce) container sour cream
1 (1.8 ounce) package dry leek soup mix
1 (4 ounce) can water chestnuts, drained and chopped
1/2 (10 ounce) package frozen chopped spinach, thawed and drained
1 (1 pound) loaf round sourdough bread

DIRECTIONS:
In a medium bowl, mix together mayonnaise, sour cream, dry leek soup mix, water chestnuts and chopped spinach. Chill in the refrigerator 6 hours, or overnight.
Remove top and interior of sourdough bread. Fill with mayonnaise mixture. Tear removed bread chunks into pieces for dipping.

INGREDIENTS:
1 pound spaghetti, broken into pieces
3 (10.75 ounce) cans condensed cream of mushroom soup
12 ounces shredded Cheddar cheese
6 cups shredded boiled chicken breast meat
1 pound sauteed mushrooms
1 (4 ounce) jar sliced pimento peppers, drained
2 cups reserved chicken broth

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of salted water to a boil. Add uncooked spaghetti (broken into thirds) to the pot and cook for 8 to 10 minutes or until al dente. Drain and set aside.
In a large saucepan, heat soup over low heat. Add shredded cheese (reserve some for topping) and stir together. Then add the cooked shredded chicken, mushrooms, pimento peppers and cooked spaghetti and stir all together. Add enough of the reserved broth to make it 'sloppy' and mix all together.
Pour mixture into a 9x13 inch baking dish. Sprinkle reserved shredded cheese on top and bake in the preheated oven for 25 to 35 minutes or until bubbly.

BLT Dip
1 Cup Mayonnaise
1 Cup Sour Cream
1 Package Real Bacon Pieces (not bits) I use Oscar Meyer
1 Tomato Chopped
Mix all ingredients together and chill for about 1 hour. Serve with Frito's Scoop Corn Chips. Taste like a BLT. It's refreshing and everyone loves it.

Just did catering for a large group at work (50 persons).
Only had 1 heater so I choose to have a tapas-buffet.
Pototo-pie (Spanish tortilla), meatballs in tomatosauce (on the heater), olives, cold garlic shrimps, tzatziki, stuffed tomato, peppadews and more.

Pasta by far is your best bet. Have a pasta bar. Do a couple different type of sauces in crock pots with the pasta in a warmer. You can also do a pesto that is cold or just an oil and cheese and a Cesar salad and bread on the side.

Depens on what you are going to grill if it is steaks I would pre grill them to medium rare and put them in a warming oven they will continue to cook in there. A variey of veggies and dips and cheese, sausage and crakers are always good too and you can make all that ahead of time and sserve it oup jus before you gathering starts.
