SUGAR FREE ICE CREAM

3 lg. pkgs. sugar free pudding (kind to cook)
3 lg. cans skim evaporated milk
2 boxes (8 eggs) Egg Beaters
4 tbsp. liquid sweetener

Mix well and cook until it begins to thicken, stirring constantly. Remove from heat and cool. Use hand mixer to beat out any lumps. Refrigerate overnight. Add 2 tablespoons vanilla. Put into 1 gallon freezer bucket and finish filling with 2% milk. Mix well and freeze as usual. (Don't tell anyone this is sugar free and they won't guess!).

Actually if you already have a ice cream recipe, just substitute Splenda cup for cup for the sugar in the recipe. That's what I do and it turns out just fine.
