I love chilean sea bass or patagonian toothfish, but I hear that they are fishing them to extinction.

Butterfish, It has another name as well, but I was having trouble finding it online. It is soft and flaky just like the Chilean Sea Bass, and melts in your mouth like Butter (hence the name), and is not as over fished like that other. It may be just as difficult to find, I have gotten it at Whole Foods. Definitely yummy.

If I'm not mistaken, Chilean Sea Bass is a very firm fleshed fish. You might try substituting cod. But all fish are being overfished. 30 years ago, fish was dirt cheap, far cheaper than beef. Now it is far more expensive.
