They are filled with nitrogen so that the moisture inside them doesn't freeze, and because the tyres don't burst when the plane touches down due to all the friction (the wheels can glow red hot while braking).

Definitely 100% nitrogen. Nitrogen is a very stable gas & will not contribute to an aircraft or brake fire.

depends on the plane, if the cabin is pressurized it will usually be nitrogen. If not, air.
