UH.....you don't!! If you are her 'maid of honor'....then you two are suppose to be extremely close and she obviously asked you to read it for a reason....this is her day, not your....if you don't want the responsibilities that come along with 'maid of honor', then ask her to choose another 'maid of honor' because you don't feel comfortable!!

If she's printed the programs already and your name is in it as a reader of that particular reading, then you'll just have to suck it up and spend a few seconds of your life doing something you don't want to do to make your friend happy. But as MOH, that's pretty much what your main job is anyway.
Or, ask if you can rewrite the reading, or find a better one that has the same theme and present it to her. However, if she is doing a traditional church reading, there are restrictions to what readings she can have. For example, Catholic weddings need a certain number of biblical passages for readings, and there really aren't too many of them that are romantic. She might also have to have the readings approved by the officiant, and she might not have time to do that if the wedding is only a week away.

Sorry but you are going to have to do it. Unless you feel comfortable asking her if you can change it a little bit. But everyone knows that you did not pick what you read so it will only reflect on her and her tastes.

You love her and it's her wedding.
Just read the tacking things... it's 2 mins out of your life and she wants you to do it.
It must really mean something to her.. or she won't have ask.
Just suck it up and do it.
We all wear tacky dress and horrible shoes... to make the bride happy. I think you making a big deal out of it and you'll just upset her. And you have to understand it's her special day and unless something is going to financial or physical hurt you- then just do it.
I had to read a religious thing that I didn't believe before at a friends wedding- you just do it and make them happy.

Ask her if the words you don't feel comfortable reading can be replaced. I am sure that she will work with you if you talk to her about it. Just tell her how you feel and be nice about it.
