It's AR 600-20, specifically paragraph 1-6. That document outlines the proper title of address of each rank. It is not a punitive regulation and failure to address any Soldier by their proper title is not in itself punishable. It becomes punishable if the person not properly addressed is an NCO or Officer and he or she perceives the conduct of the lower ranking Soldier as disrespectful. Then the failulre to address may be treated as a violation of Article 89 (Officers) or 91 (NCOs).

I've been out of the army too long to cite the AR. But you need to be clear when you toss out the E-5 paygrade. Do you mean E-5 as in NCO buck sergeant? Or is it the specialist rank E-5, which obviously you do not call sergeant. It sounds like you mean a 3 strip NCO without the splattered chicken. Do they still call it that.....
Besides, what else would you call him/her with 3 chevrons? I don't see but the singular choice of sergeant. By the way you could ask a similar question concerning the E-4. Is the E-4 a specialist or a corporal thus an NCO. Sure it will be in the same AR.

You do call an E-5 a Sergeant. E-5 is the pay grade, and Sergeant is an E-5's rank. E-4 is a Corporal or a Specialist in the Army which is lower ranking than a Sergeant.

Army regulation 600-20, 600-200, The Uniformed Code of Military Justice and the Department of the Army Pamphlet for Military Customs and Courtesy specifically say...
Pvt E1 through Private First Class will be addressed as Private.
Specialist E4 as Speciaist
Sergeant E5 though Master Sergeant E8 will be addressed as Sergeant
First Sergeant E8 as First Sergent
Sergeant Major, Command Sergeant Major and the Sergeant Major of the Army are all will be addressed as Sergeant Major.
Failure to call a superior by their proper rank is punishable under the Uniformed Code of Military Justice and failure of an NCO to enforce it is even worse.
As one answerer wrote about a Sergeant allowing one to call them by their first names...That Non Commissioned Officer is derilect in his duties and is failing to enforce regulatory guidance.

Your first poster answered your question. An AR is an army document. It stands for Army Regulation.
The US Army no longer has E-5 specialists. Only Buck sergeants these days ;)

This discussion reminds me of the movie "A Few Good Men." Remember when Cruise's character asks the Private to find the messhall's location in the Gitmo manual? When the Pvt. says it's not there, Cruise asks how he found it, then. The answer is...he followed everyone else.
How does an E-4 know to call an E-5 by rank? By following everyone else.
As a side note, that's how everyone learns language. Babies don't read manuals to learn to speak. They mimic people speaking.

Uniform Code Of Military Justice. When Addressing a higher ranking enlisted member (E-4 corporal~E9) while in uniform, you
call them Corporal or Seargent when speaking to them. Some Sgt. are pretyy cool about letting you call them by first name when not in a crowd of other soldiers. If you are in the military and went through Basic Training, you should already know this.

Because an E5 is a Sergeant. Any other rank would call an E5 a Sgt as well. It the same as calling another person by there rank.

Customs and Courtesies.. AR 600-25 I think.
Or perhaps Chain of Command, which is AR 600-20
or even code of conduct AR 350-30
I've been out of the army for a while now and have forgotten most of the AR's and FM's
