Baba Ganoush: (smokey eggplant dip)
Roast 2 eggplants whole then scrape flesh away from skin put flesh in processer add 3 cloves garlic 3Tbls chopped parsely, 1tsp cumin powder, 1/4 cup yogurt, juice of one lemon, 1/4 cup olive oil, puree and season, eat with fresh bread or crakers
a bit of pesto on top is a great addition

Peel skin and thinly slice. Dice tomatoes and onions. Place pot to hot and add oil, when oil is hot add aubergine, tomatoes and onions and sautee until becomes dry and aubergine begins to melt. Add salt to taste and a little water to boil. Check every 2 mins, when water is almost gone, stir and cruch remaining of abuergine until looks like chutney. Goes great with naan bread.
