Marinating is commonly used to flavor foods and to tenderize tougher cuts of meat.
In meats, the acid causes the tissue to break down, allowing more moisture to be absorbed and giving a juicier end product. However, too much acid can be detrimental to the end product. A good marinade will have a delicate balance of spices, acid and oil.
This process, makes the food tastier and easier to chew and digest.

When marinating a tender cut of beef or pork, i do not marinate for more than 2 hrs particularly with a soy sauce base sauce. I find that this adds a high-lite to the beef flavor. when marinating to tenderize beef (24 hrs), i find the marinade flavor takes over. Because this is a matter of personal taste and type of marinade, the 2hrs can vary (trial & error). I marinate poultry 6-8 hrs. another option is to warm the marinade and bast the meat while
grilling. Hope this helps!

No, you don't. You enhance the flavor of the meat by adding herbs and spices in a marinade. Dry herbs and spices won't penetrate the meat, but when soaked in water or another liquid they do. That is the whole idea of marinating.
Only when you have a piece of first grade meat, like a prime rib, a nice sirloin steak, or a glorious delmonico steak, you will want to grill it without marinating or after marinating it for only a short time.

Not that I've ever heard of...usually the marinate makes the meat/beef/etc's taste much more better, like stronger in a way. The base taste is there, just more tastier. Like with turkey and also barbecued chicken :)

if you over do it you can. So meats like chicken or fish you may want to add to the flavor of the meat. Steaks however are prized for there beef flavor. Marinade only tough pieces of beef.
