For baby back ribs ( the rib bones are smaller than spareribs) cut from the blade and center section of the loin, they are the favorite of rib aficionados because they are meatier than spare ribs and easy to handle.
For spareribs, cut from the underbelly or side of the hog, are the least meaty of all pork ribs but "spare" nothing in taste. If you are worried about excess fat, trim it with a very sharp knife.
Rub each slab of ribs with 2 teaspoons five-spice powder mixed with 1 teaspoon ground black pepper. Baste ribs toward end of cooking time with mixture of 1 jar hoisin sauce (7.25-8.5 ounces), 3/4 cup honey, 3/4 cup sherry, 1/4 cup soy sauce, 1 tablespoon grated fresh ginger root and 2 crushed garlic cloves.

Here is a great tasing rib recipe. We have 3 growing boys that devour this every time we make it.
3-4 lbs. ribs
1/4 cup vinegar
3 tblsp. soy sauce
1 tsp. sugar
1/2 tsp. pepper
4 tblsp. flour
3 tbslp. oil
1/2 cup vinegar
1 1/2 cups brown sugar
1 tblsp. cornstarch
Parboil ribs in 1/4 cup vinegar and water for 1 hour. Drain, leaving ribs in pot. Pour soy sauce, sugar, pepper and flour over ribs, turning to cover each piece.
Heat oil in skillet and brown ribs, then place in large casserole dish.
Combine 1/2 cup vinegar, brown sugar, 1 cup of water and cornstarch disolved in a bit of water in a saucepan. Cook over medium heat until slightly thickened. Pour over ribs and bake uncovered for 30 - 60 minutes.
We serve this with rice and use sauce to pour over the rice. Lip-smacking good.
I sometimes skip browning the ribs and tastes just as good. Have a cloth at the table for your fingers. Best ribs I've ever tasted. Enjoy.

I marinate mine in Italian salad dressing then wrap in foil. I then put them in the oven for a few minutes before putting on the grill. Yummy. You can cook them all the way in the oven too if you like.

I love them in the crock pot or slow cooker. Just place them in the pot with your favorite bbq sauce and let them cook. I put mine on low temp and cook all day.
