Here in East Texas we raise the sweetest, low sulfur, onions in the world.
Take the largest onions you can find and parboil them for about 25 minutes.
Let them cool and then cut a small slice off the top and scoop out the centers (trim the root end too but don't cut thru it).
Then mix some cooked, and squeezed out spinach, crumbled fried bacon, grated Parmesan cheese, a few bread crumbs (made from fresh, good quality bread) and mix with a little bit of mayonnaise to bind it all together.
Stuff the onions with this mixture and bake in a 350 degree oven for about 30 minutes.

Fried potatoes and onions. Egg sandwiches with fried onions, ketchup and horseradish. Whenever I cook something I put much more onions in than the recipe calls for. French Onion Soup!!!

Try onions with oranges and a light vinagrette. Add a bit of salt & pepper. Wonderful.

Me and onions do not mesh: ( My tummy loathes them with a passion and I can't stand the smell of them, which is really sad because I'm Asian and a lot of Asian meals are prepared with onions. Grr...

I like them with cucumbers soaked in vinegar and a dash of salt (and some water to offset some of the vinegar)
