This is because the hair of a woman is primary a youth and fertility indicator. Touching the hair is the same as placing the hands on the hips......
She is displaying herself sexually for you.....this includes the more obvious ones like licking her lips to more subtle body language like exposing her wrists and neck to you.
All hardwired.....goes back thousands of generations.

What makes you think that they are attracted? Maybe seeing the mans dirty body makes them feel itchy

Because they are thinking about thier appearance and are sub-conciously "making themselves pretty" for someone they are attracted to.

its called grooming.women touch there hair as a body language sign to let the man know that they are interested.Most girls probably arent even aware that they are actually doing it.

Hadn't noticed they did, but if they do it's probably because your hair is your crowning glory, your main asset (in many cases), and they subconsciously want to make sure its all in place and looking good.
