My mother-in-law broke her wrist and will be in a cast for weeks. She is unable to cook or even open a can of soup. My husband wants me to cook some food and bring it over to her, some things that she can keep in her fridge and just microwave. I don't know why, but I am at a loss. We don't usually eat leftovers, so I'm not sure what will work well for this. Does anyone have any ideas? Thank you!

Buy a nice fat chicken and roast it in a slow oven with her favorite herbs until it is nearly falling off the bone. Remove and cool. Remove both breast and put one into microwave safe dish along with a handful of snow peas seasoned and some boiled & sliced red potatoes seasoned and topped with a bit of butter. This is the first meal of Roast Chicken & Vegetables. Slice the remaining breast & place in baggy for sandwiches during the week.

Put roasting pan onto a medium flame, scraping up the juices & add some butter. Toss in some diced onion and celery & saute until just barely brown, season with some sage the thyme, add 2 tb flour thoroughly mixing in, then add 1 1/2 cups of water, bringing to a full boil, then reduce flame to simmer. Remove legs discarding skin, dice and add to simmering gravy. Add a 1/4 cup half & half or cream and 3 tb Parmesan Cheese. Serve over some rice or make small dumplings or boiled noodles, dotting the top with butter and a sprinkling of Parmesan. A bit of parsley is nice. This is the second dish, Chicken & Dumplings or Chicken & Noodles. Take the remaining chicken, skin and bones, any extra gravy, cover with water and bring to a boil. Simmer until nice broth is made, season with salt & pepper. Strain keeping any nice pieces of chicken or just use broth, pouring into a container. will keep for one week. This broth can be frozen, she can use as soup base for extra meal. One chicken, two meals plus sandwiches & soup. Hope she likes chicken.

Pasta and sauces work well.
cook a roast and slice it up for her, get a couple of potatoes and scrub them for her so all she has to do is put them in the micro wave.
cook some chicken breasts and veggies
fried chicken
anything that you cook for dinner and can put into bowls with lids that are not too hard to get off she can reheat.
You can plate the food cover with saran wrap then cover it with foil for transport then all she will have to do is pull off the foil.
I usually try to cook one meal a week that will have leftovers so that I just do it differntly another night so that I have one less night standing over the stove for an hour!

Tuna Cassarole

1 can tuna, drained
1 can mushroom soup
1 small onion
1 small can chopped black olives
1 medium package potato chips
1/2 package of egg noodles

In pan of water cook noodles until limp. In 2 quart cassarole dish mix tuna, soup, chopped onion and black olives. Add noodles when done, pour one soup can of milk and stir mixture. Vent potato chip bag and crush chips spread over top of cassarole, dot with butter.

Cook for 30 to 40 minutes at 350 degrees or until top is golden brown. Will keep in refrigerator for 3 to 5 days if covered.

Tuna Salad

1 can tuna drained
3 hard boiled eggs
3 tablespoons onion
3 to 4 chopped sweet pickles or dill
mayo

In bowl mix tuna, eggs, pickles, onion and salt and pepper, use enough mayo is dampen the mixture like a spread,

Place a lettuce leaf in a bowl, spoon tuna salad on lettuce leaf.

Serve with slice tomatoes

Tuna salad will keep 3 to 5 days in refrigerator if covered.

Corn Beef Hash

1 can corned beef
2 medium potatoes
2 carrots

In skillet crumble up corn beef, peel and chop potatoes, prepare carrots and slice. In skillet first place the crumbled up corn beef then the chopped potatoes, and the carrots on top. Pour enough water in skillet until it can be seen on the side of skillet, do not cover with water. Salt and pepper, cover with lid and cook on medium heat for apox, 30 minutes. try not to lift lid. At 20 minutes check for doneness of carrots if they are soft, that a fork easily pierces carrots the hash is done. Spoon onto plate serve with green salad and crusty rolls.

Put 2 lbs pork TENDERLOIN in crock pot. Open package of lipton onion soup put on top of pork, flip pork. Add 1 cup water, 3/4 cup red wine (i use cooking wine), 3 tbls soy sauce. Flip again, pepper to taste. Top with crushed garlic (i buy this in the jar in the produce section). Leave garlic to cook on top. Cook low 4 hrs.

When almost ready open a package of Lipton flavored rice or pasta. Microwave as per direction. Same with green beans or corn. Open the can simmer on stove with a little salt and pepper (i add bacon grease to beans, butter to corn). Serve with a loaf of that store bought "homemade" bread.

Lasanga is perfect. It freezes well, reheats well, and is very simple. A twist you can throw into it to give it some sort of nutrition is mushrooms, spinach, zucchini, or some other easy veggie.

I'd also recommend making a HUGE salad and set it up in a tupperware. Make it a chef-type salad, big pieces of deli ham and cheese, maybe some of those package "salad enhancers" like bacon bits and such. Keeps for a few days.

For dessert Sainsbury's presently have the brand new Gu Chocolate fondue on present at part cost- £two.ninety nine as an alternative of £five.ninety nine. Would make a cool dessert with marshmallows and strawberries and so on. I might opt for 2 well publications- you do not desire to be too complete to benefit from the relaxation of the night time in combination!! ;)

one polish sausage 3 large potato's one onion one clove of garlic some butter ( if you like bell peppers they go well)
cut the sausage in to about 1/2 inch slices dice onion chop garlic
place on sheet of foil season to taste i use salt pepper garlic salt seasoning salt lemon pepper ( in other words anything in the cupboard) place another sheet of foil on top crimp edges to make a tightly closed bag cook in oven for one hour at 375

can be served alone or makes grate burritos if making burrito ad cheese

will keep in fridge for about 1 week

Casserole, lasagne, soup, stew, mild curry, fish pie, meatloaf. Anything you can make in a big batch and freeze.
