You can be hired in day, but it all depends on where you live. In arizona it is a right to work state meaning that if you want to quit you do not need a reason or notice. But that also means they can fire you without notice or reason. In a place where you have a union you will have to check with the rules pertaining to the union. It usually will take a few days for the paperwork to fall through. Payroll takes a day, Social Security takes a day and then your backround check. It shouldn't take to long. You can also tell your employer to hire you as a contracted worker in which s/he pays the taxes and you are under contract. I have been both of these. If you are a contracted worker, You can start as soon as you write on paper how much you will be earning.

Generally you would not get a job offer at the campus interview - if they feel you're a fit for one of their openings, they'd more likely bring you to their offices for a further interview.
