Oh man this is a real easy recipe.
It's called Poor man's lobster.

Take haddock rinse off with water. Place on tin foil or a tin bag. Put dabs of butter on the haddock with lemon juice and old Bay seasonings. Cover haddock and put in the oven on 350 for about 30 or 45 mins and presto instant yummy lobster. Shhh not really.

3 3/4 teaspoons olive oil -- divided
4 1/2 cups sliced onion
3/4 cup red bell pepper strips
3 tablespoons golden raisins
3 tablespoons balsamic vinegar

3/8 teaspoon salt
1/8 teaspoon pepper

Preheat oven to 450º. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Addonion and the next 6 ingredients (onion through pepper). Cover and cook 10 minutes or until onion is wilted, stirring occasionally. Set aside; keep warm.Place fillets in a shallow baking dish coated with cooking spray. Brush fillets with 1/2 teaspoon oil; sprinkle with breadcrumbs and 1/8 teaspoon salt. Bake at 450º for 12 minutes or until fish flakes easily when tested with a fork. Serve the onion mixture with fish.

That depends on how you want to cook it. You can cut it into strips, dredge it then bread in a micxture of panko (Japanese bread crumbs) and lemon pepper, then bake, or you can poach it in broth, or if you have the whole fish instead of fillets or steaks, you can do a salt crust.

(For salt crust, stuff the cavety with whatever fresh herbs you can get that would go well, cover the outside of the fish with thinly sliced lemon, then with the salt crust. To make a salt crust, you mix kosher salt, egg whites, and some dried versions of the herbs you stuffed the fish with, and cover the entire fish top and bottom, so set the fish on some of the crust before you mound the rest over top. The egg whites will bake the salt into a hard shell which keeps the steam in to cook the fish, and traps all the flavor in. When you serve, you break the shell with a hammer, peel it back, then serve the fish.

1 cup sliced onion

1 can (14.5 ounces) diced tomatoes, undrained
1/2 teaspoon dried leaf thyme

Cook frozen spinach in a small amount of boiling water with 1 teaspoon salt, for about 5 minutes. Drain well, squeezing out excess water.
In a medium skillet, melt butter or margarine over medium low heat.

Add onions and sauté for about 5 minutes, or until onions are tender. Add spinach and nutmeg; cook for 3 minutes, stirring frequently.
In a shallow, lightly buttered 2-quart casserole, arrange fish fillets in a single layer. Place a spoonfuls of spinach between haddock fillets.

Drain tomatoes; reserve juice, adding a little water, if necessary, to measure 1 cup. Place tomatoes around haddock fillets; sprinkle with herbs and remaining 1 teaspoon salt. Bake, uncovered, at 375° for 20 to 25 minutes. Fish should flake easily with a fork when done.

In a small saucepan, melt 1 tablespoon butter or margarine; saute 1 tablespoon finely chopped onion until tender. Add 3/4 cup reserved tomato juice and bring to the boil.
