I wanted to add in some poppy seeds. Can anybody tell me how much poppy seed I should add to the recipe? (makes about 12 largish muffins). thanks

I would use 3/4 cup of poppy seeds .. if you use too little it gets lost and looks like scant pepper.

1 3/4 cup all-purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup milk
1/3 cup vegetable oil
1 egg, beaten
1 cup blueberries
1 1/2 tbs poppy seeds
2 tablespoons sugar
1 teaspoon grated lemon rind
Melted butter, optional
Sugar, optional


Directions:

Combine flour, 1/2 cup sugar, baking powder, poppy seeds and salt in large mixing bowl; make a well in center of mixture. Combine milk, oil and egg; add to dry ingredients, stirring just until moistened.

Toss blueberries with 2 tablespoons sugar and lemon rind; gently fold into batter. Spoon into greased muffin tins, filling 2/3 full. Bake at 400 degrees F for 25 minutes or until muffins are golden brown.

While muffins are still warm, dip tops in melted butter and then in sugar, if desired.

It depends on how much you like it-- I would say 1-2 tablespoons

I would add less--about a teaspoon or even less.
