To make a potato pie, you need:

4 large potatoes
2 cups sugar
1 stick butter
1 pinch cinnamon
1 pinch nutmeg
1 store-bought pie crust
or your can just line a pan with vanilla wafers
instead
1/2 cup milk


Boil the potatoes until tender. When you stick a
fork in them it should go in easy but you don't
want them to fall apart.

Let the potatoes cool and then peel them.

Put the potatoes in a large mixing bowl and
mash them thoroughly with a potatoe masher.
Melt the butter and pour it and the other
ingredients in the bowl of potatoes. Stir
until well mixed.

Whether you used a ready made pie crust or
just cookies, pour the potatoes mixture
into the crust.

Put into an oven preheated to 375 degrees.
Cook for about 35-40 minutes or until a toothpick
inserted in the center comes out dry.

I like to eat the pie while still hot. It's
good cold too though with Whipped Cream on top.

If you want you can make a meringue topping by
blending confectionary sugar with egg whites.
After the pie is almost done, spread the
meringue thinly across the top. Continue baking
until the meringue turns light brown. If you
use the meiangue, you can add the egg yokes
to the pie if you like. I prefer my pie
without eggs, so I just save the yokes for breakfast

Since you're getting a lot of dinner recipes, here's a recipe that's just nice to have around to impress company. This is a basic muffin recipe that you can change up by adding whatever mix ins you want, which is nice for price and allergy problems.

1 1/2 cups all-purpose flour
1/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter
1 cup sour cream
1 large egg
1 teaspoon vanilla

Preheat oven to 400 degrees F and line 12 (1/3-cup) muffin cups with paper liners.
Into a bowl, sift together flour, sugar, baking powder, baking soda, and salt. Melt butter and in a small bowl whisk together with sour cream, egg, and vanilla. Stir butter mixture (and additional ingredients; see below) into flour mixture until just combined. Divide the batter among muffin cups (this batter is thick and will not run easily like other muffin batters) and bake in middle of oven until golden and a tester comes out clean, about 20 minutes.

Try adding: 1 chopped banana and 3/4 cup semisweet chocolate chips; or 1 cup toasted almonds, 3/4 cup dried cranberries, and 1/4 teaspoon almond extract; or 1 cup chopped drained canned pineapple and 1 cup sweetened flaked coconut; or 1 cup chopped dried apricots and 1 tablespoon poppy seeds.

Garlic Chicken Breasts with Brown Sugar
This is so easy and very good!
Tbs oil
6 or more garlic cloves, minced
1 Tbs brown sugar
3 boneless skinless chicken breasts

Preheat the oven to 500F.

Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.

Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.

Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken breasts across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.


Cannoli dip
8 oz. cream cheese, softened
1 stick margarine, softened
1/2 cup sugar
1 tsp vanilla
1/4 bag mini semi sweet morsels

Beat the first 4 ingredients, then add morsels and mix by hand.
Eat by dipping animal crackers of graham cracker sticks
Voila, super easy! Enjoy!

King Ranch Chicken -- Amazingly Easy & Versatile
Serve with Green Salad. Feeds 6 - 8 and reheats well in microwave.
THE BASIC RECIPE
1 can cream of mushroom soup
1 can cream of chicken soup
1 tsp. cumin (opt)
1 dozen corn tortillas, torn in 1/4s
1 chicken, boiled & chopped
-- opt. a deli/rotisserie or canned whole-canned chicken
1 cup/can chicken broth
1 pound Longhorn cheddar cheese, grated

Dip tortilla pieces in broth. Line the bottom & sides of a 9x13" casserole dish. Layer chicken, soup(s), chilis, cheese, & repeat, ending with grated cheese. BAKE: at 325°F for 1 hr, or until bubbly & golden on top. Note: May be refrigerated up to 24 hours before baking.
VARIATIONS and Substitutions:
1. Great way to use up leftover roast turkey (or pork, or beef...)!
2. Goundbeef with "Golden-Mushroom" soup
3. 2 sm jalapenos chilis, Seeds Removed (that's the Firey part)
4. Corn or tortilla chips can be used in a pinch. Add extra broth or water (apx 1/4 cp)
5. Monterey Jack, or any sharp cheddar can be used.

Blackened Honey Ginger Chicken:
15 minutes prep time.

Boneless skinless chicken breasts.
Coat lightly in Extra Virgin Olive Oil
Coat lightly with Honey.
If using, dried Ginger, powder it thouroughly. If fresh Ginger, use discretion.
powder with paprika thouroughly.
salt and Pepper to taste
place on aluminum foil
Grill on very low heat about an hour.
Crank up the heat the last 5 minutes or so.
Cuts with a fork.

Here is one you might enjoy: It serves one or two, and can be easily expanded to feed more folks.
Quick and Easy Jambalaya

1 tbsp. vegetable oil
1 garlic clove, peeled and sliced
1 small onion diced
1/2 red bell pepper, diced
2 sticks celery, sliced
3/4 cup diced, cooked chicken
1 small piece of smoked sausage, bias cut
2 tomatoes, diced, or 1 can of diced tomatoes.
(You can also use Rotel)
1 cup chicken stock (you can use canned or
buillon
2/3 cup long grain rice
2 tbsp. ch. parsley
salt, black pepper, Tabasco or Louisiana hot sauce
taste.

Heat oil in large saucepan and gently cook chopped
vegetables for five minutes until softened. Add
sausage, rice, tomatoes and stock, bringing to a boil.
Cook for 10 minutes. Add chicken and cook 5-10
more minutes, or until rice is done and liquid is

Chicken Curry Broccoli Casserole
•4 chicken breast halves (ok to use less)
•1 can cream of chicken soup
•Â½ c mayo
•Â½ t lemon juice
•1 T mild curry powder
•Â¼ c bread crumbs
•1 T butter
•10 oz pkg frozen broccoli florets, cooked til crisp-tender, drained
•Â½ c shredded cheddar
Cut uncooked chicken into pieces and saute until cooked but still juicy. Preheat oven to 350. Combine soup, mayo, lemon juice & curry powder and mix well. Combine crumbs & butter. Place broccoli in casserole in single layer. Cover with chicken. Pour soup mixture over. Sprinkle with bread crumbs and cheese. Bake until heated through, about 25 min. Serve with rice, mango chutney & mandarin oranges.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some red wine and enjoy.
