1 1/2 oz (45gm) Butter
1 Onion, finely chopped
2 Cloves Garlic, crushed As always, adjust garlic according to taste
1 Glass Dry White Wine How big a glass is up to you!
Salt and Pepper
1 oz (30gm) Flour
1/2 pint (280 ml) Milk

As usual we recommend using organic ingredients wherever possible.


Melt 1/2 oz (15gm) butter in a pan, add the chopped onions and cook gently until soft and golden. Add the garlic and cook for another minute or so. Season with salt and pepper to taste. Add the wine, turn up the heat and reduce the volume by about half. Remove from heat.
In another pan melt the remaining 1 oz (30 gm) of butter. Add the flour, stir and cook for about five minutes.

Now add the milk. If you've never made a white sauce before, the key is: take it slowly. Add just a little milk, stir well, then a little more. At first the result will look like a pastry. After a little more milk it will resemble an elastic dough. Beat this smooth. Then as you add the rest of the milk a little at a time keep stirring. You'll end up with a nice thick sauce.

Mix in the onion and garlic and you're done.

Serve the garlic sauce warm.

If things go horribly wrong and the garlic sauce is lumpy, don't panic - just bung it in a food processor and whizz for a few seconds. Yes, it's cheating but no-one will ever know!

Garlic Cream

2 tbsp butter
1 tsp minced garlic
3 tbsp flour
1 (3 oz) pkg of cream cheese
1 can chicken broth
1/2 tsp pepper

In 2 quart saucepan, melt butter, add garlic. Cook for 1 minute, then add flour and cook until smooth and bubbly.
Add other ingredients, stirring occasionally, until sauce is smooth and thickened.

Ruben, this always works for me:

2 tablespoons of butter
2 tablespoons of flour
2 cups of milk or buttermilk or heavy cream
1/3 cup of parmasean cheese, grated (fresh, not in the can)
Crushed garlic to taste

Medium fire on the stove
Mix the flour and butter in a pot to make your roux
Slowly add your dairy, and whisk while pouring
When you get the consistency you like, add the garlic

Garlic Bechamel Sauce

Melt three tablespoons butter in a saucepan. At two cloves garlic, crushed. Wisk in two tablespoons flour. In a seperate saucepan (or microwave) heat three cups milk to very warm. Wisk hot milk all at once into the butter mixture. Continue to wisk over warm until it thickens. It will thinken more as it cools. Add salt, pepper, and anything else you might want to add. (I like adding spinach.)

Saute minced garlic in butter, add heavy cream - think about how much sauce you want. (I use half and half) when this gets hot but not boiling, add grated parmesan cheese until melted and the right consistency. Season to taste with salt , pepper and parsley.
