Chocolate Covered Bananas
4 Bananas
1 12-oz. bag Chocolate Chips
3/4 cup Shredded Coconut
Chopped Peanuts or other desired toppings
Have toppings in individual shallow bowls. Peel banana and cut into 1-1/2 to 2 inch pieces. Pour chocolate chips in top of double boiler over simmering water. Stir constantly until chocolate is melted taking care to avoid any water from getting into chocolate. Once melted, remove chocolate from heat. With a fork, dip banana pieces, one at a time into the chocolate until coated, then dip into desired topping and place on parchment-lined freezer safe dish. Freeze until set.

Here's a couple different recipes :)
CHOCOLATE - COVERED BANANA POPS
3 ripe bananas
9 wooden ice cream sticks or skewers
2 c. semi-sweet chocolate chips
2 tbsp. shortening
1 1/2 c. coarsely chopped, unsalted, roasted peanuts
Peel bananas, cut each into thirds, insert wooden stick into each banana piece, and place on wax paper covered tray cover; cover. Freeze until firm. In top of double boiler over hot (not boiling water), melt chocolate chips and shortening. Remove bananas from freezer just before dipping. Dip each piece into chocolate mix; cover completely and roll in peanuts. Cover and return to freezer.
CHOCOLATE AND PEANUT BUTTER COVERED
BANANAS
1 c. chocolate morsels
4 tbsp. butter
6 tbsp. creamy peanut butter
Sliced bananas
Melt chocolate and peanut butter. Insert toothpicks in banana slices. Dip bananas in chocolate. Put on wax paper and freeze

i love chocolate coverd bananas, i use chocolate candy bars, melt them using a double boiler method, and then drizzle chocolate over them. you can freeze them but they will be hard to eat.
