College Student Survival Cooking 101:
If you have oil and vinegar, make a vinagrette with about 1/4 oil, 2-3 tbsp vinegar (to taste), and then add in a tbsp of soy sauce, 1/4 tsp garlic and onion and parsley, and 1 1/2 tsp brown sugar (to taste). mix up the sauce and then put the chicken in a not-too-big microwave container. Pour the sauce over the chicken and cook covered (not tightly) on high in the micro for about 6 min (10 if frozen), turning it over halfway through cooking. because microwave power levels vary, keep an eye on it, stop it and poke at it every now and then to make sure it's not getting tough. Otherwise, it should come out very tender and juicy.
In the meantime, throw the carrots, broccoli, garlic, onion and parsley into a small sauce pan with a little water in the bottom to keep it from burning. cook on a med lo heat, and stir every minute or so until cooked to desired softness.

Cook the chicken breast and cut it in small pieces. Stir-fry the broccoli and baby carrots in a sauce made with soy sauce, garlic, onion, and brown sugar. Cook the brown rice. Add the chicken to the stir-fried vegetables and put this over the rice. You'll end up with something you could enjoy in a Chinese restaurant.

Cook some spaghetti in one pan & stir fry the chicken, brocolli, carrots, garlic and onion in another, make a sauce with soy sauce and a tbsp of brown sugar. Add the sauce and pasta to the stir fry pan with the chicken & veggies. Yum! Or make fried rice with cooked brown rice, and diced cooked chicken, brocolli, and carrots, fry them in a large pan and when all hot, add scrambled raw eggs and cook through. Sprinkle on some soy sauce.
