Are the two types interchangeable? Will the same PCMCIA adaptor work with both?

I need to buy a card for a Canon S3 camera.

For the Canon S3, you'll need an SD card. A 512MB card should suffice (176 pictures at best quality and up to 1777 pictures at the lowest quality)
I can personally recommend the brand SanDisk. Their 'Ultra 2' line should be fine for your camera. They have faster cards, which are more expensive, but your camera can't take advantage of the extra speed.

SD is Secure Digital and CF is Compact flash. Size wise they are a totally different size and shape, so they are not interchangeable, and unless your PCMCIA adaptor is miltifunction it won't work with both of them.

CF = Compact Flash.
