Beef & Pepper Rice Skillet
1 1/2 lbs round steak, cut into thin strips
1 cup onion, sliced
1 cup rice
1 can beef broth (10 1/2 oz) or use bouillon
cube in water
1 soup can of water
3 Tablespoons soy sauce
2 green peppers, coarsely chopped
1 jar pimentos, sliced (if desired)
Brown beef in oil. Stir in everything except the green pepper & pimento. Bring to boil, reduce heat, cover and cook over low til liquid is absorbed and rice is tender (about 25 minutes). Stir in the green pepper & pimento. Heat through.

Breaded pork cutlets, a boxed rice dish, and some good steamed vegetables sound good to me. Wait! that's what I had for supper. LOL Done in about 20 minutes. Get some pork cutlets that have been tenderized, or some cubed beef steaks sound good too. Dredge them in some flour that you have added salt, pepper, seasoned salt, and garlic powder to. Put them in a little hot oil in a pan and fry them until nice and brown on both sides. Yummy. Make rice dish according to directions, add your favorite veggies, and bingo. Hint: Have the rice dish going before you fry the cutlets, the rice dish will take the longest, the cutlets will fry in about ten minutes. Sometimes these cutlets turn out a little dry, so your favorite steak sauce may be necessary.

Cheesy Chicken Pot Pie
1 1/2 cups chicken stock
1 cup cooked, shredded chicken meat
3/4 cup green peas
1/3 cup diced celery
1/3 cup diced carrots
1 1/2 cups shredded Cheddar cheese
2 tablespoons cornstarch
1/4 cup milk
1 recipe pastry for a 9 inch double crust pie
In a medium saucepan combine the stock, chicken, peas, celery and carrots. Bring to a boil. Mix cornstarch with milk and stir into stock mixture. Cook stirring constantly for 5 minutes. Remove from heat and let cool for 1 hour. Preheat oven to 325 degrees F (175 degrees C). Stir cheese into filling mixture and pour into a 9 inch pie crust. Top with second crust, seal edges and cut slits in top crust. Place on a cookie sheet and bake for 35 to 40 minutes or until top crust is golden brown.
