1 1/2 cups granulated sugar
1/2 cup butter or margarine
3/4 cup all-purpose flour
2/3 cup evaporated milk
2 cups quick-cooking oats
2/3 cup creamy peanut butter
1 teaspoon vanilla extract
1/4 teaspoon salt

In a saucepan, combine the sugar, butter, flour and milk. Bring to a full rolling boil and cook for 3 minutes, stirring constantly.
Remove from heat and add remaining ingredients all at once. Blend well.
Drop tablespoonfuls onto wax paper or aluminum foil. Cool completely before serving or storing.

Peanut butter chews:

Melt together in microwave or in sauce pan:
1 stick butter
1/2 cup peanut butter
1/2 cup corn syrup
Remove from heat and stir in 1 teaspoon vanilla extract.

Pour this mixture over 4 cups corn flakes. Stir until flakes are coated, and press into a greased 9x13 pan. Cool to room temperature and cut into bars.

Not a traditional cookie, but REALLY yummy! Enjoy!
