I dont know if you are looking for eggless because of food allergies- if so you can replace the egg with EnerG brand egg replacer which works really well or even cheaper and works great would e to mix 1 cup of water with 4 - 6 tablespoons of flax seed- blend in a blender until thick and mix in the batter right away. This replaces two eggs very nicely and does not affect the flavor

Sometimes I replace 1 egg with a banana! It won't be as fluffy, but it will be delicious and eggless!
