There's two recipes we like. They make small serving tho' (for 2 only) so if you need to, double or triple up the recipes depending on how many you're feeding.
Potato Wedges:
2 Large Baking Potatoes
Olive Oil Cooking Spray
1/2 teaspoon Salt
Dash of Garlic Salt
Dash of Cayenne Pepper
Pierce potatoes and place them in the microwave approximately three minutes or until still firm but starting to feel tender. Remove and cut into wedges. Places wedges on a cooking sheet (spray with olive oil spray). Lightly coat the wedges with the olive oil spray and sprinkle with the salt, garlic salt and cayenne pepper mix. Bake at 425-degrees approximately 20 to 25 minutes or until golden brown. Great with ranch dip or dressing!
Dutch Potatoes
1/4 cup Onion, chopped
2 teaspoons butter
2 cups Potatoes, cubed and peeled
1 cup carrots, sliced (fresh works best)
1/4 cup sour cream
1/4 teaspoon salt
Snipped chives (preferably fresh)
Place potatoes and carrots in large saucepan and cover with water. Bring to boil then reduce heat and simmer an additional 10 to 15 minutes, until potatoes are tender. Drain. While the potatoes are cooking, saute the onion and butter for 8 to 10 minutes or until golden brown. In a small mixing bowl, mash the potatoes and carrots; mix in onion, sour cream and salt. Sprinkle chives over the top.
Enjoy!

Slice 4 medium sized potatoes 1/4 inch or use thick setting on mandolin or food processor slicer. Put slices in cold ice bath with a little lemon juice. Once all the potatoes are sliced drain in a colander and salt and pepper. Place them in a baking dish or deep pie plate.
I make a cheese sauce using 2 Tbls butter and 1/2 cup diced onions and 1 clove garlic finely diced. Cook for 2 mins then add 2 Tbls flour. Cook on medium heat until bubbling then add 2 Tbls white wine and 1/2 cup milk very slowly as you continue to stir to avoid lumps. Once I get a thick syrupy consistency I add 1 cup of cheese (1/2 c Parmesan & 1/2 c cheddar). Then pour over top of potatoes and bake at 350 degree oven for 30-40 mins (you can add bread crumbs). Top with chopped parsley and serve.

My mother makes some awsome roast potatoes, I don't know if its the type you're thinking about.
First, peel and cut the potatoes into smaller, roast potato size, wash and boil until almost fully cooked. Drain in a colander and shake the potatoes quite sharply in the colander to make the edges fluffy. Put them on a baking tray and brush them with soy sauce/worcester sauce and bake until crunchy and yummy.

Fried potatoes. Like homefries fry in a pan with some onion. They great. I boil my potatoes for a little bit then when they are a little soft i put them in a pan with onion, salt and pepper. These are great. Better for breakfast. Scalloped potatoes are good. Twice baked potatoes. Potato salad. It can be simple with just celery, onion, mayo, salt, pepper & paprika.

i admire mashed potatoes while they're made with the purple potatoes with the skins left on and substituting cream for milk. they're sooo sturdy! I additionally love garlic smashed potatoes...my 2d favourite could could desire to be hash browns, baked potatoes are ok yet i do in comparison to them plenty. i admire specific styles of fries like the pro fries or curly fries. Chips are sturdy too in the event that they're bitter cream and onion or pizza flavored...

1. Sliced new potatoes in parsley, green onions and butter.
2. Sweet potato soufle
3. Potato casserole....just add cream of chicken soup, sour cream, cheddar cheese, and anything you normally put on a baked potato(onions, cheese, bacon, muchrooms...etc....) ...add about 1 cup of melted margarine...mix in pan with your favorite style of potatoes(hashbrown and shredded work great) and bake at 350 degrees for 45 mins. or until brown...yummm!

Slice potatoes, boil to fork tender (maybe a little less), add ranch dressing, put in baking dish, add cheddar cheese (or whatever you like) and bake until cheese is melted and crispy. I don't know if these are considered scalloped or Au Gratin but they are crazy good.
