I understand, some folks don't have a grill..... I marinate or season, bake to desired pink or doneness - at a lower temperature(325-350) , drain if you don't have the drippey pan, THEN coat with a layer of butter and turn the broiler on to sear(seer?) and crisp up that outside,which also makes it prettier. Repeat butter if necessary,(use a brush) this part doesn't take very long, don't leave unattended!! Do use a good piece of beef.

generaly it takes 7 minutes to brown a steak in the broiler. You need to brown both sides so you need 14 minutes. In terms of doneness, you may need to flip again if the steak is very thick. Do not flip before the first side is brown. Even if your steak is too thin for 14 minutes of cooking, you need at least one brown side. 14 minutes works for about a 3/4 to 1 inch steak. Get in the habbit of tuching your steak so you know what done ones feel like. Also your steak needs to rest for about 5 minutes before you cut it. If you have a Broil setting, use that instead of a temperature. You want it hot. That is what browns the outside without drying out the middle. Although there is no preheat for the broiler, let it heat up for about 10 minutes before you start.
You don't need butter, just salt and pepper, after it is cooked. Make sure you buy USDA Choice Stakes. Those USDA Select ones are cheap and tough. Those Angus ones are too pricy for what you get, unless they are on sale.
If you can't get good steaks just soak them in olive oil or italian dressing for at least 45 minutes before you cook them.

it depends on the heat of the brioler. But steak should be cooked at least 400 degrees with just salt/pepper and maybe garlic salt. After cooking (times will vary depending on how done you want them) you can season with butter. but do this as soon as they are out of the oven and still hot. hope this helps!

Never, never cook a steak in the oven or broiler - Grill, Grill, Grill - no butter either, just sprinkle with some dry seasoning, toss a fresh salad & enjoy!
