Are you looking for ideas?
I would try to select something that everyone wants to work on and help with...
1) Katrina Victims. I know it's been done and many are ready for another "charity," but, from looking at the news, help is still needed.
2) Soldiers in Iraq and overseas. You can "adopt" a platoon and send all kinds of stuff- goodies, cards, notes, etc. Everything is gratefully accepted and used
3) Children. Everyone wants to help children. You can collect all kinds of stuff- toys, clothes, etc. and the proceeds will go to a local charity or to an organization like the Salvation Army. Families can be pre-selected by local churches
4) Food drives. It is nearing fall and winter. Food drives will help stock local charity food pantries for the winter season
5) A "Giving Tree" this is popular at Christmas. Local charitable organizations, churches, etc. have lists of families in need of gifts, etc at holiday time. An artificial tree can be put up in a central location with "tags." These tags will have the sex, age and gift category on them. For example: Boy age 5 wants fire engine toy. Take a tag, buy the gift (everything must be new), wrap it, and put the tag on it. Then, volunteers distribute the gifts in time for the holidays.
6) Samaritan's Purse sponsors a "shoe box" gift drive for children in poor sections of the U.S. and around the world. This is fun- put small gifts in the shoe box for a pre-selected child: Girl 12-14, Boy 3-6. Then, buy toys, candies, etc and put it in the box. Wrap the box and lid separately and tie with string along with form. These are gathered then sent off around the world. This is called "Operation Christmas Child."
Good luck with your project.

Good luck with the churches. Most think their building fund is enough involvement.
