Spirits means the result of distillation.
Distillation means heating an alcoholic drink and collecting the vapour that comes from it -- the spirit of the drink. In other words, it is condensed, hence its stronger alcohol content.
Brandy is distilled wine - wine is fermented grape juice
Whiskey is effectively distilled beer* - beer is fermented grains

Spirits is the alchohol made from the mash before it is aged and has its flavors infused for the final product. Vodka and Gin are pretty much strait spirits. No aging they are bottled pretty well directly after manufacturing.
