You just change some of the ingredients, by measurements
If it calls for 1 cup and you want to half it = 1/2 cup or to double = 2 cups
ingredients..if it calls for peaches and you can change it to apples or strawberries. It's just a matter of what you want in it

You customize it by making it to your own tastes. That said as your making a dish, sample it. Think it needs some herbs? Pick your favorite or go out on an edge and try something you have never tried before. It's to your liking and not anyone elses. That's what makes it yours. Good luck and happy cooking!!!

Instead of the called for veggies, substitute veggies you have on hand; same goes for meat; sour cream can take the place of yogurt in alot of recipes; you can substitue alfredo sauce for tomato sauce; you can change spices, keeping them consistent with each other or with the cuisine; experiment and have fun! Cooking is an art! (But, baking is a science.)

Use recipes as a basic starting point and experiment.
If you like spices add some of your favorite spices. Cinnamon is a favorite of mine so I add it to Mexican dishes, chili, sauces, baked goods, dry rubs for meat, etc.
If you don't like too sweet foods you can substitute Splenda or just reduce the quantity. Add brown sugar as half the amount of white sugar to baked goods and sauces. Add apple sauce to baked goods to reduce the amount of sugar or added to sauces to sweeten without sugar.
Add veggies to a dish like, bell peppers, zucchini, celery to spaghetti and chili recipes. Add garden burger pieces instead of ground beef. Add ground turkey instead of ground beef.
Cook with olive oil in place of butter or vegetable oil in sautees, salad dressings or sauces.
Cooking is trial and error and your chance to be creative. By creating something special you share a part of yourself with your family and friends. Don't be afraid of failure as the successes will be that much more rewarding.
