Oh My Goodness....I was just thinking about PIE!!!!! I am on a diet so it is out of the question, however good old fashion Buttermilk Sweet Potato Pie with whipped cream and a side of Vanilla Bean Ice cream is my absolute favorite. My great grand mother use to make the best sweet potato pie. She passed away when I was 12, but I remember helping her in the kitchen when she made the pies. Watching her put the ingredients in the mixing bowl (no measuring cups or spoons needed. It was all from the heart) and then stir until the batter was a smooth and creamy concoction of yumminess! I always got to lick the bowl afterwards and I always got the first slice one they cooled. Oh man, does that bring back good memories! Thanks for that!

APPLE CRUMB PIE

2 tbsp. flour
3/4 c. sugar
1/4 tsp. salt
1/4 tsp. ground nutmeg
1 egg, slightly beaten
1 c. sour cream
1 tsp. vanilla
2 c. thinly sliced apples
9 inch pie shell (unbaked)

Sift flour, sugar, salt and nutmeg into large bowl. Stir in beaten egg, sour cream and vanilla. Fold in apples, spoon into unbaked pastry shell. Bake at 400 degrees for 15 minutes. Lower heat to 350 degrees. Bake 30 minutes longer.
Prepare crumb topping. Remove pie from oven. Reset oven to 400 degrees, sprinkle pie with topping. Return pie to oven. Bake 10 minutes, longer or until topping is nicely brown.


CRUMB TOPPING:

Mix 1/2 cup sugar, 1/3 cup flour, 1 teaspoon ground cinnamon and 1/4 cup melted butter in small bowl until crumbly.
