i think all the best ice creams had been made already if it was like the 80s or 90s people would come up with things we have now so i don't think there are any left that doesn't go into a food taste. But maybe an alcohol flavor

1. Coconut Custard with Carmel Swirls.
2. Spanish Bread Pudding
3. Chocolate Marscopone Cream
4. Cellery (OK THIS ONE WAS A JOKE)

Pumpkin ice cream with graham cracker crumbs and cinnamon syrup swirled in.

Also, I'd like to recreate the ice cream I had as a little kid; there was a place that made "Ceylon Tea" and the ice cream was grey ... but it was the best damn ice cream I ever had.

Pomegranate Party.
Pomegranate seems to be the new hit flavor.
I'd "party" it up with a vanilla fudge swirl and tiny M&M-like-things that could not of course be called M&Ms without copyright infringement. :o) They would look like confetti.

I think you start with dolce de leche and add a swirl of caramel and chunks of tiramisu, also chopped roasted hazelnuts and maybe some dark bittersweet chocolate shavings.
