Tomorrow is my boyfriend's birthday and I am planning to have a picnic with some friends of ours at a nice park. I need help with a menu though...was thinking along the lines of chips, salsa, guacamole, and sandwiches, but what kind of sandwiches.....anybody got a stellar chicken salad? Also what for dessert? Help!

INGREDIENTS:
1 cooked, boneless chicken breast half, chopped
2 stalks celery, chopped
3 tablespoons mayonnaise
1/2 onion, finely diced
2 dill pickles, chopped
1/4 teaspoon garlic powder
salt and pepper to taste
--------------------------------------------------------------------------------
DIRECTIONS:
Combine the chicken, celery, mayonnaise, onion and pickle; mix well.
Season with the garlic powder, salt and pepper. Serve with lettuce on fresh crusty bread or bun.

As for desert, go simple, cookies or brownies maybe?

Brownies for dessert!
My chicken salad recipie is pretty simple,but good!
Chicken Breast
scallions(chopped)
mayo
dash of tabasco(to taste)
chopped sweet pickle
Sounds like a great picnic!

I have the BEST Chicken Salad recipie..but i wouldnt make sandwiches out of it. Its better served cold..on a plate..with sliced tomatoes..also cold.

Why not go with the classics..cold fried chicken..potato salad...baked beans...rolls...and a nice pie for dessert??

also something cold to drink

wine..or sangria..

Ham and cheese is always a great sandwich. Cookies or brownies pack well for picnic desserts.

take some chocolate.and heres a nice wee recipie thats gotta impress him

Apricots In Caramelized Brandy Sauce
Serves 4

1/ cup sugar
1/2 cup water
1/4 cup brandy
2 tablespoons fresh lemon juice
4 cups firm fresh apricots, quartered lengthwise and pitted

Cook sugar on medium heat in 12-inch skillet until it begins to melt. Stir occasionally until sugar is completely melted and golden brown in appearance (about 10 minutes). Add water, brandy, and lemon juice. Reduce heat to low, stirring constantly until caramel is dissolved. Stir in apricots and simmer for about 10 minutes or when fruit is tender. Serve hot or cold
