As long as it looks healthy and leafy (no seeds) it is good to pick.

Once picked, it is likely good for about a week or so (depending on how you store it, etc). You can also cut up the stalk in to small chunks and place it in to freezer bags to use at a later time for pies, stew, etc.

CAUTION: Always remove the leaf **immediately** after picking the rhubarb. The leaf contains toxins that will begin to flow back in to the edible stalk once the rhubarb has been plucked/cut from the roots. By removing the leaf immediately, the toxins are not able to flow back in to the stalk.

It can be picked until it puts out a seedhead.
