I harvested 4 big baskets of plums off my tree this year and I always end up freezing plums for cobblers. I pit the fruit and pour sugar over it to cover, stir, and then pack into freezer ziplock bags. Squeeze all the air out of the bag (i even inhale the last bit of air from the bag before closing to get all of it out so the bag looks vacuum sealed)
Then i put the bag on a flat pan to freeze in a flat shape that is easy to store in the freezer.
When i want to make some cobbler or pie I just pull them, put them in a pan, toss a little cinnamon and butter and top with cobbler, crisp, or crumble topping .

You can also pack the pitted plums in a sugar syrup. Add as much water as sugar (1 cup sugar to 1 cup water) (make enough syrup to coat the fruit) and a teaspoon of ascorbic acid (or lemon juice) per quart of syrup. Then freeze in bags as mentioned above.

Preparation – Select firm, ripe fruit soft enough to yield to slight pressure. Sort and wash. Leave whole or cut in halves or quarters and pit.

Syrup Pack – Pack fruit and cover with cold 40 to 50 percent syrup, depending on tartness of fruit (page 214). For improved quality, add 1/2 teaspoon (1500 mg) ascorbic acid to each quart of syrup. Leave headspace. Seal and freeze.

Plum Sauce – Boil well-ripened clingstone plums without water until soft; then remove pits and skins. Continue cooking the pulp and juice until it thickens. Add 1 part sugar (with spices, if desired) to 4 parts plums.

Cool and package, leaving headspace. Seal and freeze.

2. Open freezer door.
3. Put bag in freezer.
4. Close freezer door.

Pit them and put them in freezer bags or if you want to use them separately then lay them on a cookie sheet in the freezer and bag them after they are frozen.

place them in a ziploc bag and stick them in the top half of your fridge.
